Targeted at aspiring chefs and individuals who already have foundational knowledge and skills working with baking ingredients and equipment. This course will certainly bring your baking skills in the kitchen to the next level professionally. More than just bakes, but with our recently added module of Tea Diffusion and Coffee Brewing. Allowing individuals to not just serve up delicious bakes, but also with amazing coffee/tea to compliment.

This course is SkillsFuture credits eligible and up to 90% course fee subsidy.

To achieve a full qualification, learners must successfully attain competency in all the following modules:-

  1. Conflict Management
  2. Tea Diffusion and Coffee Brewing
    • This course includes: - How to brew a perfect cuppa and tea, using the appropriate techniques, tools and equipment - History and Culture of Tea and Coffee - Varieties of Tea and Coffee - Preparation Techniques - Sensory Evaluation / Tasting - Health Benefits
  3. Prepare Basic Malay Desserts
  4. Fundamentals of Bread Making
  5. Pastry Preparation 2 - Choux and Yeast Products

Union Training Assistance Programme (UTAP) 

  • NTUC members enjoy 50% unfunded course fee support for up to $250 each year (or up to $500 for NTUC members aged 40 years old and above) when you sign up for courses supported under UTAP (Union Training Assistance Programme). Target Audiences:

  • School leavers and new entrants into the Food & Beverage industry who already have some basic Pastry & baking skills
  • For working professionals in the Food & Beverage industry who wish to upgrade their skills and knowledge to obtain an industry recognised certification
  • Participants who have completed WSQ - Certificate in Food Services (Pastry & Baking) in Asian Culinary institute (ACI).

 

Entry Requirements:

  • Completed WSQ - Certificate in Food Services (Pastry & Baking) in Asian Culinary institute (ACI).
  • Minimum Secondary 2 education and above, or WPLN  4.
  • Trainees are required to purchase a starter kit which includes the uniform, safety boots and tools set.
  • All applicants are required to attend a preview session before being accepted into the course. This will be done prior to course commencement date.
  • Admission is subject to submission of the required supporting documents and the minimum headcount to start a class.
  • Minimum 16 years old is required.
  • Trainees are required to clean up kitchen after class.
  • There will be theory and practical assessments for all WSQ courses.

All our courses are full days and requires standing in the kitchen the entire time.

Please note that our kitchens are designed to accommodate 24 Trainees with 3 Trainees sharing one work-station. With relaxation of Covid measures, we have reverted to conducting classes at full capacity of 24 pax. 请注意本学院的厨房可容纳 24 名学员。其中 3 名学员共用一个工作站。随着 Covid-19 措施的放松,本学院已恢复为 24 名学员上课。

REFUND POLICY FOR WITHDRAWAL

Period of Withdrawal^

Refund Policy

Withdrawal 14 days or more before course starts.

100% refund of paid fees

Withdraw from course less than 14 days before course starts.

50% refund of paid fees

Withdrawal on or after course starts.

No refund of paid fees

^The date of withdrawal will be based on the date the request for withdrawal is lodged by the trainee.

With valid reason (documentary proof required) for less than 75% attendance, trainee can be transferred to the next run, subject to availability of seats at ACI's discretion. This request must be submitted within 5 working days from the missed class date, after which paid course fee will be forfeited. Transfer to the next class is only valid for 4 months or until 1 Feb, whichever is earlier, after which, the paid fee will be forfeited.

If trainee missed Day 1 of class, they will not be allowed to attend remaining sessions (applicable for short courses only). 

Trainee will not be allowed to continue with the course once there is no valid reason for absenteeism, at any point during the course. Paid fees will be forfeited.

NB: To enjoy SkillsFuture funding, trainees must achieve 75% attendance and be rated Competent in assessment.
